(Ah-Sigh-EE)

Looking back, I probably mispronounced the word “Acai” for at least two years, until someone had the heart to correct me. Who knew?! Ah-Sigh-EE. It almost sounds like something you’d yell while doing Kung Fu. *ACAI!*

Today I’m sharing one of my favorite Acai berry smoothie bowl recipes. This is the perfect recipe for those nights when you have a “How is it already 8PM?! Ack! I still need to eat something for dinner!” moments. Or a hearty post workout snack/meal. I find that it’s usually the first scenario for me. 

So why the Acai? The Acai berry is a small superfruit that contains powerful antioxidants and healthy omegas. In short, it’s a tiny berry that is not only delicious, but good for you too! You can find unsweetened Acai smoothie packs in the freezer section of Sprouts and other health food stores.  As you become an Acai smoothie bowl black belt, you will find that it’s easy to substitute a variety of fruits and veggies. If you like to frequent your local Farmer’s Market, I encourage you to try what’s in season. Your smoothie bowl will not only taste better, but you’ll get some extra karma points for supporting your local farmer.

Acai Berry Smoothie Bowl
(Serves 1)

This recipe is great for a post-gym (or Bar Method) workout or a quick breakfast option. Once you start making these smoothie bowls you can get creative and add your own protein packed ingredients like chia and flax seeds. 

INGREDIENTS:
Bowl:
 1 frozen unsweetened Acai smoothie pack (3.53oz)
 1 frozen banana
 1 1/2 cups frozen mixed berries
 1/4 cup yogurt kefir
Toppings:
 granola
 fresh mango
 fresh blueberries
 unsweetened shredded coconut
 raw honey (optional for vegan-friendly version)
INSTRUCTIONS:
1. In a powerful blender; blend the yogurt kefir, mixed berries, banana, and Acai pouch. Be careful not to overblend your fruit mix. You want the consistency to remain thick. 
2. Spoon into serving bowl and add your favorite toppings.
